Cinco de Mayo Success!

This past friday night was not only shabbos but also Cinco de Mayo. So the theme of Friday night dinner was Mexcian. I thought that I would share a recipe that went over quite well. I call it Mexican Cabbage Salad but Howie called it Mexican Medley-and I like that better.

Mexican Medley

1 bag of shredded lettuce
1 red onion
4 plum tomatoes
1 jalapeno pepper
cilantro

Dressing:

4 limes juiced
3 TBL red wine vinegar
sprinkling of chili powder and cayenne pepper (adjusted to desired level of heat)
salt and pepper

You can make it and serve the same day but I let it marinate for a day and it tasted great!!
